Yes. The manual doesn't reveal this but you can.
To do this, open the Catalogue as Administrator. Open Catalog -> Administration, Custom Fields tab. Select the field you need and click edit. You can also edit any of the PDL related features. Remove the old title, type a new one and click OK, the new name will now show up in field lists instead of the old one.
Existing data in the old field is preserved - as the new one. Note that any saved Finds or Galleries should be checked after this procedure in case included/displayed fields need to be reset.
Beware, though. Some pre-existing field settings are changed after you change the name of a Custom Field. In such an event, the QuickFind preference, Gallery Sort setting, and Slideshow Display Field setting become unchecked, the Gallery Sort setting reverts to Unsorted, and the Metadata Settings Extract/Embed Data lists lose their field assignment (i.e. only those pointing to the old fieldname). Any saved Create Webpages or NetPublish templates sets using the field will need to be updated and resaved and the pages/sites re-published if currently using that field for display. You might also want to check any SavedViews that display the field (though testing shows SVs are unaffected by renaming).
